Fried Catfish

Today we went to the 4-County Electric Cooperative annual meeting.  They have a health fair and a meal and then they have the meeting part.  One of the big incentives to attend is, at the end of the meeting they have a drawing for a free “retired” pickup truck from their fleet vehicles.

Anyway, like last year we arrived after most of the health fair stuff was over.  We got in line for the meal and, same as last year, it was a fried catfish dinner.  They also had water, soft drinks, baked beans, coleslaw, and cookies for desert.  It was really tasty.

Then we went to the meeting part and listened to their reports and then they had the drawing for the pickup which some older lady was very happy to win.  “I have that number!”, she shouted from the back.  Good for her!

But what I was going to talk about was the catfish.  Fish farming is big in this area.  The soil is usually a heavy clay.  Get yourself a dozer and push the ground around a little and you’ve got a lake.  There are catfish growing companies from which you can buy the equipment and the stock. And there is a processing plant south of us about 25 miles in Macon, MS.  So there is a market.

I don’t know very much about the actual operations.  I know you have to feed them.  And I know that you have to do tests on the water and sometimes run big aeration fan thingies which stir up the water.  I had a conversation with a guy once who knew something about it, and he told me a story about someone who slacked off on their testing and all of the fish died.  That’s a sad story, given that they are so tasty!
