Them Bone, Them Bones, Them Dry Bones

I have a friend who is ill.  I would say sick but some people call each other sick for the wrong reasons, so we will say “ill”.  This friend goes to the same church as I do.  She is an encourager to me so now it is my turn to be an encourager to her.

I am going to fix her a meal this week.  She likes soup.  Broth based soup.  So…

My husband and I drove this afternoon to Maben, Mississippi.  This is the only place around that cuts its own meat!  That means they have leftover bones.  Just what I wanted.  I called ahead (it is a two hour trip, on hour each way) and had them set aside 6 pounds of fresh beef bones for me.  They were very gracious and said that they would.

We picked up the bones and drove home where I immediately began making a stock (these were beef bones, BTW).  It takes three hours to make a good, rich stock.  Right now, I have 38 minutes left on the simmering stage of the stock…then I will clarify the stock, chill it to skim the fat off the top and then proceed to the soup making stage.

Mmmm, Mmmm, Good!

I am going to bake her some bread tomorrow morning.  I need to do something about croutons.  Making croutons is a drag and seeing as I need to go to the store to buy Swiss cheese (NO-I do not make my own cheese), I think I will just pick up a bag of croutons for the soup.

Pick up cheese, croutons and maybe some…cheesecake for dessert?
