Today’s Run: 50 min lifting at the “Y”
I have found a new recipe~Eggs in Purgatory. I ran across this recipe from a friend in Great Britain. She used it and I was intrigued with the name and had to find out what it was and how to make it.
Eggs in Purgatory is a simple recipe. There are many variations online but the one I use is:
Hot Marinara sauce on a plate
Potato pancake on top of the Marinara sauce
Fried eggs (over easy is how we have them here) on top of the Potato pancake
Shredded Parmesan cheese on top of the egg
A dash or two of Louisiana hot sauce
Ta-Dah!!! Easy, Easy, Easy!!! Yummy and filling. So, the next time you are making mashed potatoes, make a little extra and give this easy recipe a try.
