Today’s Run: Rest Day
Today was a day of new recipes. As I have mentioned before, we follow a diabetic diet and are always on the lookout for new ideas. Well, my Mom bought me a magazine from the grocery store that is all recipes and today was the day to try a few.
Lunch: Asia Pork Loin Roast. Group decision: Yummy! The only drawback to this recipe is that you cannot make it on a lark~you have to plan ahead because of the marinade time~minimum of 8hrs! It is easy to do, you just have to plan ahead.
Dinner: Balsamic Roast Chicken. Group decision: Average. This is a throw it in the oven and forget about it recipe. You make a rub and put it under the skin of the chicken. Combine 1/2 C Balsamic Vinegar and 1/2 C red wine and bake for 2 1/2 hrs. Easy, easy, easy. But the pork loin roast was better.
We will try one more new recipe tomorrow and then go back to a few favorites. Cannot shock those taste buds too much! Here is a pic of the Balsamic Roast Chicken. It really did taste better than it looked.
