Today’s Run: 45 Min. lifting at the “Y”
About eight months ago, about the same time I began running, my husband and I decided to begin eating healthy. We were not eating horrible at that time, we just decided to cut back on fat, calories, sodium~you know~ to all the things your Doctor wants you to do. The route we decided to take was not a fad diet or anything, we bought cookbooks for diabetic cooking.
These cookbooks are actually pretty good! You run across a really awful recipe now and then but on the whole the food is edible! Since we began this adventure, we have seen pounds fall off as well as inches and our Doctor is pleased (as are we!).
I thought I would share tonight’s vegetable. It is peas with garlic.
one C frozen peas
1/3 C sliced garlic
one T rosemary
1/3 C parmesan cheese
salt and pepper to taste
Saute’ garlic until brown. Add frozen peas. Mix until warm. Add remaining ingredients and stir. Serve. Here is a pic.
