Skepitcal

I dunno…I’m skeptical.

If you recall, this past Winter, we voted on a new Minister for our church.  Well, he and his family are here.  They started last Sunday.  It took a little while because they moved here to Mississippi from the U.K.

Anyway, we are having a reception tomorrow.  An official, “Welcome to Mississippi AND welcome to our church!”  A bunch of the ladies are doing this do-dah and I was asked to participate.  Just in a small way.  Nothing major.

I was asked to make sandwiches.  100 sandwiches.

These sandwiches had specific instructions.  Kinda.

They were to be:  Cream Cheese, Mayo and Crushed Pineapple sandwiches.  Crusts cut off.  No ragged edges.  AND… No Recipe!

I emailed the lady in charge.  I asked how to make them seeing as I had never heard of such a concoction as that.  My initial reaction was, “Ewwww!!!”  Cream cheese, mayo and pineapple sandwiches!?!  Nasty!

Her reply was, “There really isn’t any recipe.  You’ll know it when you are making it.  It’ll look right.”

Uh-huh.

Sounds like a recipe for food poisoning if you ask me.

BUT, Google is my friend.

I Googled recipes for this sandwich and found LOTS of them!  I was amazed!

I selected the recipe that sounded the least offensive and headed on over to Kroger this morning.  Came home, softened the cream cheese and mixed the stuff up.  It looked like someone had been sick.

I cut the crusts off the bread and took the crusts out to the chickens.  They were happy!  They love bread!!!  Then I came back into the house and bit the bullet.  I tried to smear that stuff over the crustless bread.

What a sticky mess.

Paxton, my ever faithful and hungry pooch was there, hoping against hope that something might “accidentally” drop from the counter.  Darn.  That did not happen.  Remember, Paxton is on a doggie diet.

I made the sandwiches then went to put them in a container.  They would not fit.  Figures.

I ended up with two containers of these sandwiches.  I hopped in the car with #1 son.  We drove immediately to church and got rid of those things.  Then we drove to the fireworks store.  It is almost the 4th of July and he wanted things that would go “BANG!”

We are home now.  Whew!  What an adventure in the kitchen today!  I am still skeptical.  Don’t expect to see me eating any of those sandwiches tomorrow.  I think I’ll stick with a cup of coffee.  That is usually pretty safe.
