Vandalia Onions

Today’s Run:  Cut the Grass

This past Saturday my husband, nephew and I went to a steam engine show.  At this show I had the opportunity to purchase a 10# bag of just dug up, sweet Vandalia onions.  I love sweet onions and I love to make French Onion Soup from them.  Mmmm…  I determined, on the spot, to make the soup this week.

The next thing I needed to make my soup was beef bones for the stock  (I insist on making my own stock).  I went to Kroger.  No bones.  Called Wal Mart.  No bones (no surprise). Called all around our area.  No bones.  People do not cut their own meat anymore.  They have it shipped in.  Hmmm…

My husband is tenacious (bless his heart).  He finally found a place that cuts their own meat in Maben, Mississippi.  An hour away from where we live in Columbus, Mississippi.  We hopped in the car.

We were able to purchase fifteen pounds of beef bones for only $10.00!  What a bargain and a deal!  We bought 15 pounds because an hour is a long way to drive for bones.

The place where we purchased these bones was…unique.  We thought it was a butcher shop.  And it was, kinda.  This is their shop sign.  I think it is an unusual combination for a butcher shop, do not you?

Anyway, I now have beef stock simmering on the stove and I am making croutons from my homemade bread.  Tonight we will have French Onion Soup!  Mmmm  Mmmm  Good!
